Strawberry Balsamic Chutney and Goat Cheese Bruschetta

Ingredients
  

  • 2 cups fresh strawberries, chopped
  • 2 tsp. honey
  • ½ tbsp. balsamic vinegar
  • 1 loaf French bread baguette, sliced into 24 rounds about ¾-inch thick
  • Olive oil
  • 8-ounces goat cheese
  • 1 tsp. fresh basil, chopped
  • 1 tsp. fresh thyme, chopped
  • 1 tsp. fresh chives, chopped
  • ⅛ tsp. freshly ground black pepper
  • Balsamic glaze

Instructions
 

  • Pre-heat the oven to 350°F.
  • Add chopped strawberries, honey and balsamic vinegar to a bowl; stir to combine; set aside.
  • Place sliced bread on a sheet pan and drizzle with olive oil.
  • Place bread in the pre-heated oven and toast until golden brown.
  • Remove pan from oven; set aside.
  • In a small bowl, combine the goat cheese and chopped basil, thyme, chives, and pepper.
  • Spread each toasted bread slice with goat cheese mixture.
  • Top with sweetened strawberries.
  • Drizzle on balsamic reduction.
  • Sprinkle with additional torn basil leaves and serve.
