Bacon Wrapped Tater Tots

Ingredients
  

For the Tater Tots:

  • 8 slices bacon, cut into thirds
  • 12 tater tots
  • 1 cup cheddar cheese, shredded
  • ⅓ cup brown sugar
  • ¼ tsp. chili powder

For the Dipping Sauce:

  • ½ cup mayonnaise
  • 2 tbsp. ketchup
  • 1 tbsp. horseradish
  • ⅓ tsp. paprika
  • ¼ tsp. salt
  • ⅛ tsp. oregano
  • Pinch of black pepper
  • ½ tsp. hot sauce of choice

Instructions
 

To prepare the tater tots:

  • Pre-heat the oven to 400°F.
  • In a small bowl. add the brown sugar and chili powder; mix to thoroughly combine; set aside.
  • Cut bacon slices into 3 pieces and place 2 pieces opposite ways into the cups of a 12 cup mini-muffin tin.
  • Put 1 to 2 frozen tater tots on top of the bacon.
  • Evenly distribute the brown sugar and chili powder over the tops of the tater tots.
  • Place in the pre-heated oven and bake for 12 to 15 minutes or until bacon is crisp (use the duration suggested on the bacon package).
  • Open oven door and top with cheddar cheese; cook for another 5 minutes or until the cheese is melted.
  • Remove from the oven; remove bacon cups from the mini-muffin pan; place on a wire rack (with a paper towel underneath) to cool and drain excess grease.
  • Let cool 5 minutes before serving.

To prepare the dipping sauce:

  • In a small bowl, mix all the sauce ingredients together.
  • Put sauce in an airtight container and place in the refrigerator until ready to serve.

Notes

If the bacon is not crisp at the end of the cook time, remove from the mini-muffin tin and put on a baking sheet; return to the oven for a few more minutes.
