Crispy Fish with Lemon-Dill Sauce

Ingredients
  

  • 2 large egg whites, lightly beaten
  • 1 cup panko breadcrumbs
  • ½ tsp. paprika
  • ¾ tsp. onion powder
  • ¾ tsp. garlic powder
  • 4 6-ounce skinless cod fillets
  • 1 tsp. black pepper
  • ⅜ tsp. salt
  • Cooking spray
  • ¼ cup canola mayonnaise
  • 2 tbsp. dill pickle, finely chopped
  • 1 tsp. fresh lemon juice
  • 1 tsp. fresh dill, chopped
  • Lemon wedges

Instructions
 

  • Pre-heat the broiler to high.
  • Coat a broiler pan with with non-stick cooking spray.
  • Place egg whites in a shallow dish.
  • Combine panko, paprika, onion powder and garlic powder in a second shallow dish.
  • Sprinkle fish evenly with pepper and salt.
  • Dip each fillet in egg white; dredge in panko mixture; place on the broiler pan coated with cooking spray.
  • Place in the pre-heated oven and broil 4 minutes, on each side, or until desired degree of doneness.
  • In a small bowl, combine mayonnaise, pickle, lemon juice and dill; mix to thoroughly combine.
  • Serve the fish with the lemon-dill sauce and lemon wedges.
