Easy Mexican Casserole

Ingredients
  

  • 1-pound lean ground beef
  • 2 cups salsa
  • 1 15-ounce can Ranch Style beans
  • 1 13-ounce bag tortilla chips, crushed
  • 1 10-ounce can Ro-tel tomatoes
  • 1 small onion, chopped
  • 2 cups cheddar cheese, shredded, divided
  • 1 1-ounce package taco seasoning
  • 2 cups sour cream
  • 1 2-ounce can black olives, drained and sliced
  • ½ cup green onion, chopped
  • ½ cup fresh tomato, chopped

Instructions
 

  • Pre-heat the oven to 325°F.
  • In a skillet, brown the ground beef, over medium heat, until browned and crumbly; drain the fat.
  • Stir in salsa; reduce heat and simmer until liquid is absorbed; about 20 minutes.
  • Stir in beans; cook until heated through.
  • Grease a 9 x 13-inch casserole dish.
  • Spread crushed tortilla chips over the bottom of the baking dish; spoon beef mixture on top.
  • Spread sour cream over beef; then sprinkle olives, green onion and tomatoes on top.
  • Cover with the cheddar cheese.
  • Place in the pre-heated oven and bake until hot and bubbly; about 30 minutes.
  • Remove from the oven and allow to sit for 5 – 10 mins.
