Baked Feta with Olives and Sun-Dried Tomatoes

Ingredients
  

  • 8-ounce block feta cheese
  • 1 cup pitted olives, drained
  • ½ cup sun-dried tomatoes
  • ⅓ cup olive oil
  • 3 cloves garlic, thinly sliced
  • ½ tsp. dried oregano
  • ½ tsp. dried thyme
  • ½ tsp. dried rosemary
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste
  • Fresh pasrsely, chopped, for garnish
  • Sliced French bread or crostini, for serving

Instructions
 

  • Pre-heat the oven to 350°F.
  • Place the feta cheese in a small baking dish.
  • Scatter the olives and sun-dried tomatoes around the feta.
  • In a small bowl, combine the olive oil, sliced garlic, oregano, thyme, rosemary, and a pinch of salt and pepper; stir to thoroughly combine.
  • Pour the olive oil mixture over the feta, olives and sun-dried tomatoes.
  • Place in the pre-heated oven and bake for 20 minutes.
  • After the 20 minutes have elapsed, switch the oven to broiler and broil for 1 – 2 minutes to lightly brown the top; don't walk away during this step as the top can burn very quickly.
  • Garnish with chopped parsley and serve with sliced French bread or crostini.
