Strawberry Cheesecake French Toast

Ingredients
  

For the Filling:

  • 8 ounces cream cheese, softened
  • ¼ cup confectioners' sugar
  • 1 tsp. vanilla extract
  • 1 cup strawberries, diced

For the French Toast:

  • 8 slices thick-cut bread
  • 4 large eggs
  • 1 cup whole milk
  • 1 tsp. vanilla extract
  • ½ tsp. ground cinnamon
  • Butter, for frying

For Serving:

  • Maple syrup
  • Additional strawberries, diced
  • Confectioners' sugar

Instructions
 

To prepare the filling:

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add confectioners' sugar and vanilla extract; mix until well combined.
  • Gently fold in the diced strawberries; set aside.

To prepare the French toast batter:

  • In a shallow dish, whisk together eggs, milk, vanilla extract and ground cinnamon.

To assemble the French toast sandwiches:

  • Spread the cream cheese filling onto 4 slices of bread.
  • Top each with another slice of bread to make 4 sandwiches.

To cook the French toast:

  • Heat a skillet or griddle, over medium heat, and melt some of the butter.
  • Dip each sandwich into the French toast batter, making sure to coat both sides evenly.
  • Place the battered sandwiches onto the hot skillet, or griddle, and cook until golden brown on both sides; about 3 – 4 minutes per side.

To serve:

  • Once cooked, remove the French toast from the skillet and transfer to serving plates.
  • Serve the stuffed French toast warm with maple syrup, additional diced strawberries and a dusting of confectioners' sugar.
