
Strawberry Cheesecake French Toast
Ingredients
For the Filling:
- 8 ounces cream cheese, softened
- ¼ cup confectioners' sugar
- 1 tsp. vanilla extract
- 1 cup strawberries, diced
For the French Toast:
- 8 slices thick-cut bread
- 4 large eggs
- 1 cup whole milk
- 1 tsp. vanilla extract
- ½ tsp. ground cinnamon
- Butter, for frying
For Serving:
- Maple syrup
- Additional strawberries, diced
- Confectioners' sugar
Instructions
To prepare the filling:
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add confectioners' sugar and vanilla extract; mix until well combined.
- Gently fold in the diced strawberries; set aside.
To prepare the French toast batter:
- In a shallow dish, whisk together eggs, milk, vanilla extract and ground cinnamon.
To assemble the French toast sandwiches:
- Spread the cream cheese filling onto 4 slices of bread.
- Top each with another slice of bread to make 4 sandwiches.
To cook the French toast:
- Heat a skillet or griddle, over medium heat, and melt some of the butter.
- Dip each sandwich into the French toast batter, making sure to coat both sides evenly.
- Place the battered sandwiches onto the hot skillet, or griddle, and cook until golden brown on both sides; about 3 – 4 minutes per side.
To serve:
- Once cooked, remove the French toast from the skillet and transfer to serving plates.
- Serve the stuffed French toast warm with maple syrup, additional diced strawberries and a dusting of confectioners' sugar.
