Florida Shrimp Pie

This tasty shrimp and cheese pie makes a perfect light lunch or dinner, or cut it into smaller wedges for a hearty appetizer.

Ingredients
  

  • 1 12-ounce frozen package Pillsbury Deep Dish Pie Crusts (2 in package)
  • ½ cup chive-and-onion cream cheese spread
  • 4 eggs
  • 12-ounces frozen medium, cooked, deveined and peeled shrimp, tail shells removed, coarsely chopped, thawed and well drained
  • ½ cup pepper Jack cheese, shredded

Instructions
 

  • Place cookie sheet on middle oven rack.
  • Pre-heat the oven to 375°F.
  • Let 1 crust thaw 10 to 20 minutes.
  • Prick bottom and around side thoroughly with fork.
  • Bake on the pre-heated oven, on the cookie sheet, 9 to 11 minutes or until very light golden brown.
  • Meanwhile, in a medium bowl, beat cream cheese spread with whisk or electric mixer until creamy.
  • Beat in eggs, one at a time, until mixture is smooth and well blended.
  • Stir in the shrimp and cheese.
  • Pour mixture into the pie crust.
  • Bake in the pre-heated oven, on a cookie sheet, 30 to 35 minutes or until center is set.
  • Remove from the oven, place on a wire rack and allow to cool 15 minutes before serving.
