
Zucchini Pie
Serve the zucchini pie as a main dish with fresh salads as an accompaniment.
Ingredients
- 3 large eggs
- 1 cup Parmesan cheese, grated
- ½ cup canola oil
- 1 tbsp. fresh parsley, minced
- 1 garlic clove, minced
- ¼ tsp. salt
- ⅛ tsp. pepper
- 3 cups zucchini, sliced
- 1 cup biscuit/baking mix
- 1 small onion, chopped
Instructions
- Pre-heat the oven to 350°F.
- Grease a 9-inch deep pie dish; set aside.
- In a large bowl, whisk the first 7 ingredients.
- Stir in the zucchini, baking mix and onion; mix to combine.
- Pour all into the prepared pie dish.
- Place in the pre-heated oven and bake at 350° for 25 to 35 minutes or until lightly browned.
