Raspberry Pork Chops

Ingredients
  

  • 4 boneless pork loin chops
  • 1 tbsp. canola oil
  • ¼ cup cider vinegar
  • ¼ cup seedless raspberry jam
  • 1 tbsp. prepared mustard
  • Salt and fresh ground black pepper, to taste

Instructions
 

  • In a large skillet, over medium heat, brown loin pork chops in oil on both sides.
  • Stir in the vinegar, jam, mustard, salt and pepper.
  • Reduce heat; cover and simmer for 10 – 15 minutes or until juices run clear.
  • Remove loin pork chops and keep warm.
  • Continue to cook sauce, over high heat, until reduced by half; stirring frequently.
  • Spoon over loin pork chops.
