Potato Pancakes

Ingredients
  

  • 4 cups potatoes, cooked, cold and mashed
  • 5 slices bacon
  • 1/2 tsp. onion powder
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 eggs
  • 1/2 cup cheddar cheese, shredded
  • Oil, for frying pancakes
  • Apple sauce or sour cream

Instructions
 

  • Place the bacon in a large, deep skillet, cook over medium-high heat, turning occasionally, until evenly browned and crisp about 10 minutes.
  • Remove the bacon slices, crumble; set aside.
  • Leave the bacon drippings in the skillet.
  • In a medium bowl, mix mashed potatoes, eggs, onion powder, salt, and black pepper together; thoroughly combine.
  • Stir in the crumbled bacon and Cheddar cheese.
  • Pre-heat skillet and add a couple tablespoons of oil.
  • Pour ¼ cup batter into hot pan and brown on both sides
  • Serve with applesauce or sour cream.
