Newfoundland Apricot Walnut Raisin Loaf

Ingredients
  

  • 1-¼ cups all-purpose flour
  • ½ cup sugar
  • 2-½ tsp. baking powder
  • ½ tsp. salt
  • ½ cup dry apricots, chopped
  • ¼ cup walnuts, chopped
  • ½ cup raisins
  • ¼ cup vegetable oil
  • ½ tsp. vanilla
  • ¾ cup milk
  • 2 eggs

Instructions
 

  • Pre-heat oven to 350°F.

To prepare the fruit:

  • In a medium saucepan, combine apricots, raisins, and some water.
  • Simmer very gently for 30 minutes; remove from heat and cool completely.

To prepare the loaf:

  • In a medium bowl, combine all dry ingredients; mix thoroughly.
  • In a separate bowl, mix vegetable oil, vanilla, milk and eggs.
  • Add liquid to dry ingredients and thoroughly mix until all ingredients are incorporated; do not over mix; the batter will look lumpy.

To bake loaf:

  • Pour batter into a well-greased and floured, or parchment lined, loaf pan.
  • Place in oven and bake for 55 – 65 minutes or until toothpick inserted in center of loaf comes out clean.
  • Remove from oven and let cool, on a wire rack, for 10 – 15 minutes, prior to removing from pan.
