Crock Pot Shipwreck Casserole

Ingredients
  

  • 4 onions, sliced
  • 4 potatoes, sliced
  • 1-pound hamburger meat
  • 1 cup rice, uncooked
  • 2 cups celery, sliced
  • 2 cups carrots, sliced
  • 2 cans kidney beans, undrained
  • 2 cans tomato soup
  • 2 cups boiling water
  • Salt, to taste
  • Pepper, to taste

Instructions
 

  • Spray a 6-quart crock pot with cooking spray.
  • Use cooking spray, in a medium skillet, and saute the onions until they start to become soft, about 6 – 8 minutes.
  • Layer onions, potatoes, hamburger meat, rice, celery, carrots and kidney beans.
  • In a separate bowl, mix soup, water and salt and pepper, as desired.
  • Pour over vegetable and meat mixture.
  • Cover and cook, on low, for for 4 – 5 hours.
