Pre-heat the air fryer to 380°F.
Peel the sweet potatoes; slice each potato into even ¼-inch thick sticks.
Place the sweet potatoes in a large mixing bowl; toss with olive oil, salt, garlic powder, paprika and black pepper.
Place the sweet potatoes in the air fryer basket and cook in 2 or 3 batches, depending on the size of your basket without overcrowding the pan until they are crispy.
Cook for 12 minutes, turning half way; this may vary based on the air fryer.
Serve with the dipping sauce of choice.
