Barbara’s Easy Granola
Ingredients
- 3 cups old-fashioned rolled oats
- 2/3 cup almonds, sliced, or pecans, chopped
- ½ cup unsweetened desiccated coconut
- 1/3 cup green pumpkin seeds or sunflower seeds, hulled
- ½ tsp. salt
- ½ stick unsalted butter
- 6 tbsp. honey
- 1 cup mixed dried fruits (raisins, cherries, apricots, etc.)
Instructions
- Pre-heat oven to 325° F.
- In a large bowl, stir together oats, almonds or pecans, coconut, pumpkin or sunflower seeds and salt.
- In a small saucepan, over low heat, melt butter with honey; stirring.
- Pour the butter mixture over the oat mixture and stir until well combined.
- In a large baking pan, spread granola evenly and bake in middle of oven, stirring halfway through baking, until golden brown, about 15 minutes.
- Remove from oven and cool, in pan on a rack, and stir in dried fruits.
Notes
Granola may be kept in an airtight container, at room temperature, for up to 2 weeks.
Desiccated coconut is coconut meat which has been shredded or flaked and then dried to remove as much moisture as possible. If desiccated coconut is not available, regular dried coconut can be used as a replacement, although dried content tends to have a higher moisture content, despite the “dried” in the name.
