
Cranberry Pecan Spinach Salad
Ingredients
For the Salad:
- 6 cups fresh spinach leaves
- ½ cup dried cranberries
- ½ cup pecans, toasted and chopped
- ¼ cup red onion, thinly sliced
- ¼ cup feta cheese, crumbled
For the Dressing:
- 3 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- 1 tsp. honey
- ½ tsp. Dijon mustard
- Salt and pepper, to taste
Instructions
- In a large salad bowl, add the fresh spinach leaves.
- Sprinkle the dried cranberries, toasted pecans and red onion slices over the spinach.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
- Top the salad with crumbled feta cheese.
- Serve immediately.
