Cranberry Pecan Spinach Salad

Ingredients
  

For the Salad:

  • 6 cups fresh spinach leaves
  • ½ cup dried cranberries
  • ½ cup pecans, toasted and chopped
  • ¼ cup red onion, thinly sliced
  • ¼ cup feta cheese, crumbled

For the Dressing:

  • 3 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 1 tsp. honey
  • ½ tsp. Dijon mustard
  • Salt and pepper, to taste

Instructions
 

  • In a large salad bowl, add the fresh spinach leaves.
  • Sprinkle the dried cranberries, toasted pecans and red onion slices over the spinach.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt and pepper until well combined.
  • Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
  • Top the salad with crumbled feta cheese.
  • Serve immediately.
