Crock Pot Gluten-Free Sweet Sesame Chicken

Ingredients
  

  • 20-ounces boneless skinless chicken breasts
  • ½ cup onion, finely chopped
  • 1 tbsp. toasted sesame oil
  • 2 tsp. garlic Chile sauce
  • 2 tbsp. tomato paste 
  • 2 tsp. ginger root, grated
  • ½ cup honey
  • 1/4 cup gluten-free low-sodium soy sauce
  • 2 tsp. cornstarch
  • Hot cooked basmati rice, if desired
  • ¼ cup green onions, sliced
  • 2 tsp. sesame seeds

Instructions
 

  • Spray 4 to 6-quart crock pot with cooking spray.
  • Place chicken in the crock pot.
  • In medium microwavable bowl, mix onion, sesame oil, garlic chili sauce, tomato paste and ginger root.
  • Microwave, uncovered, on High 4 to 5 minutes; stirring occasionally, until onions are softened.
  • Stir in honey and soy sauce.
  • Pour sauce over chicken in the crock pot.
  • Cover; cook, on low heat setting, 4 to 6 hours or until chicken is tender and cooked through.
  • When chicken is done, dissolve cornstarch in 2 tbsp. water.
  • Remove chicken to cutting board; shred or cut chicken into bite-sized pieces.
  • Stir cornstarch mixture into sauce in the crock pot.
  • Increase heat setting to high; cover.
  • Cook 5 to 10 minutes or until slightly thickened.
  • When sauce is slightly thickened, return chicken to the crock pot and stir into sauce.
  • Serve over rice.
  • Sprinkle with green onions and sesame seeds.

I’m going to try this recipe this weekend! I really need to start using my Instapot more often.
