Easy Breakfast Casserole

Ingredients
  

  • 24-ounces frozen hash browns 
  • 16-ounces ham, cubed
  • 8-ounces sharp cheddar cheese, shredded
  • 12 large eggs
  • 1 cup whole milk 
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • Cooking spray

Instructions
 

  • Pre-heat oven to 350°F.
  • Using a large bowl, add the frozen potatoes, ham, and cheese; toss to combine.
  • Pour the mixture into a 9 x 13-inch baking dish that has been sprayed with cooking spray.
  • Using the same large bowl, whisk the eggs with the milk, salt, and pepper.
  • Pour the egg mixture over the hash brown mixture.
  • Pat everything down with the back of a wooden spoon.
  • Place in pre-heated oven and bake for one hour, uncovered.
  • When removed from the oven, the center should be set and the edges should be golden brown.

Notes

This hash brown breakfast casserole can be made and placed in the refrigerator overnight.  Prior to baking, remove from refrigerator and allow to return to room temperature.
