Fat-Free Vegan Dijon Vinaigrette

Ingredients
  

  • ½ cup rice vinegar
  • 2 tsp. Dijon mustard
  • 2 cloves garlic, minced
  • Dash of salt, or to taste
  • Dash of pepper, or to taste

Instructions
 

  • Place all the ingredients in a small bowl.
  • Using a fork or a small whisk, whisk together until fully combined.
  • Taste and adjust seasonings to taste.
  • Place in an airtight container and refrigerate until ready to use.

Notes

Feel free to vary the kind of vinegar used in this recipe; for a more bracing and tangier version, use apple cider vinegar instead of rice vinegar.
Add or exchange the minced garlic for finely minced shallots. 
Try adding a tablespoon of finely chopped fresh herbs, if available; parsley, chives or thyme work well together, or try a combination of all three.
