Frozen Peanut Butter Cup Pie
Ingredients
For the Crust:
- 2-2/3 cups chocolate cookie crumbs
- 2/3 cup butter, melted
- 3 rounded tbsp. white sugar
For the Filling:
- 1 cup whipping cream
- 2 tbsp. confectioners' sugar
- 1 tsp. vanilla extract
- 1 14-ounce can sweetened condensed milk
- 1 cup mascarpone cheese
- 3/4 cup peanut butter
For the Chocolate Ganache Topping:
- 2 cups semi-sweet chocolate chips
- 2/3 cup whipping cream, heated in the microwave to almost boiling
Instructions
To prepare the crust:
- Lightly grease and line the bottom and sides of a 9-inch spring form pan.
- Line with parchment paper; very lightly grease the parchment paper as well.
- In a medium bowl. mix together the crumbs, butter and sugar.
- Press the crumb mixture into the bottom and 3/4 of the way up the sides of the prepared pan; set aside.
- In another medium bowl. whip the whipping cream, confectioners' sugar and vanilla extract to firm peaks.
- Slowly beat in the condensed milk.
- Add mascarpone cheese and peanut butter; beat until thoroughly combined.
- Pour into the prepared crust and freeze for several hours; overnight preferred.
To prepare the chocolate topping:
- In a double boiler, over medium heat, melt the chocolate chips and scalded whipping cream.
- Reserve a little of the chocolate mixture to drizzle over the whipped cream.
- Remove pie from freezer and spread the remainder of the chocolate topping over the top of the frozen pie.
- Return to the freezer until ready to serve.
- Before serving, garnish with whipped cream, a drizzle of the chocolate ganache and roasted peanuts.
