Ham, Egg and Cheese Breakfast Cups

Ingredients
  

  • Cooking spray
  • 16 slices deli ham
  • 8 eggs
  • Salt and pepper, to taste
  • Shredded cheddar cheese
  • Chives

Instructions
 

  • Pre-heat oven to 350°F.
  • Spray eight regular sized muffin cups with cooking spray.
  • Using two slices of ham for each cup, lay the ham slices crisscrossing each other, ruffing the slices into the muffin cup and up the sides to make it fit.
  • Crack one egg into each muffin cup.
  • Sprinkle with salt and pepper
  • Top with cheese.
  • Bake for 10 – 12 minutes or until white appears cooked.
  • Sprinkle each serving with chives prior to serving.
