Highly Recommended Mediterranean Salad
Ingredients
For the salad:
- 5 cups cherry tomatoes
- ¼ cup green olives stuffed with peppers
- 1 red bell pepper, cut into strips
- 6-ounces fresh cheese, cut into cubes
- 1 small can filleted mushrooms
- ½ cup walnuts, chopped
- 1 tbsp. capers
- Basil leaves, to taste, chopped
- Parsley, to taste, chopped
For the Dressing:
- ¼ cup olive oil
- 1 tbsp. soy sauce
- 2 tbsp. wine vinegar
- 1 tbsp. lemon juice
- Salt and pepper, to taste
Instructions
To prepare the salad:
- Wash the cherry tomatoes and cut them in half; place in a large mixing bowl.
- Add the olives stuffed with peppers, bell pepper, fresh cheese, capers and filleted mushrooms.
- Add walnuts, basil and chopped parsley; mix well to combine.
- Cover and place in the refirgerator until ready to serve.
To prepare the salad dressing:
- Using a small bottle or a glass jar, combine the olive oil, soy sauce, wine vinegar, and lemon.
- Close the container and shake it enough to emulsify.
- Remove lid and season with salt and pepper, to taste; place in the refrigerator until ready to serve.
- When ready to serve, remove from the refrigerator, shake well and pour the dressing over the salad; mix to thoroughly combine and serve.
