Highly Recommended Mediterranean Salad

Ingredients
  

For the salad:

  • 5 cups cherry tomatoes
  • ¼ cup green olives stuffed with peppers
  • 1 red bell pepper, cut into strips
  • 6-ounces fresh cheese, cut into cubes
  • 1 small can filleted mushrooms
  • ½ cup walnuts, chopped
  • 1 tbsp. capers
  • Basil leaves, to taste, chopped
  • Parsley, to taste, chopped

For the Dressing:

  • ¼ cup olive oil
  • 1 tbsp. soy sauce
  • 2 tbsp. wine vinegar
  • 1 tbsp. lemon juice
  • Salt and pepper, to taste

Instructions
 

To prepare the salad:

  • Wash the cherry tomatoes and cut them in half; place in a large mixing bowl. 
  • Add the olives stuffed with peppers, bell pepper, fresh cheese, capers and filleted mushrooms. 
  • Add walnuts, basil and chopped parsley; mix well to combine. 
  • Cover and place in the refirgerator until ready to serve.

To prepare the salad dressing:

  • Using a small bottle or a glass jar, combine the olive oil, soy sauce, wine vinegar, and lemon. 
  • Close the container and shake it enough to emulsify. 
  • Remove lid and season with salt and pepper, to taste; place in the refrigerator until ready to serve.
  • When ready to serve, remove from the refrigerator, shake well and pour the dressing over the salad; mix to thoroughly combine and serve.
