Lemon Buttermilk Cobbler

Ingredients
  

  • 1 stick butter
  • 1 cup all-purpose flour
  • 1-½ tsp. baking powder
  • ¼ tsp. salt
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 tsp. vanilla extract
  • 1 tsp. lemon extract
  • 1 21-ounce can lemon pie filling

Instructions
 

  • Pre-heat the oven to 350F.
  • Place the stick of butter in a 9-inch x 9-inch square baking dish.
  • Place the dish in the oven to melt for 3 to 4 minutes until fully melted.
  • Remove from the oven; set aside.
  • In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  • Add the sugar and whisk to combine.
  • Pour in the buttermilk, vanilla extract, and lemon extract and whisk just until combined.
  • Pour the batter evenly over the melted butter in the pan; do not stir.
  • Spoon the lemon pie filling over the batter.
  • Place in the pre-heated oven and bake for 45 – 55 minutes or until the edges of the cobbler are golden brown.
  • Remove from oven and cool slightly before serving.
