Low Carb Chicken Casserole

Ingredients
  

  • 1 pound chicken, roasted and shredded
  • 2 cups broccoli florets
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • ½ cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions
 

  • Pre-heat the oven to 350°F.
  • Grease a 9-inch x 13-inch baking dish, or similar size, with baking spray.
  • In a large bowl, combine the shredded chicken, broccoli, cauliflower rice, cheddar cheese, cream cheese, chicken broth, garlic, onion powder, paprika, salt, and pepper.
  • Mix everything well until evenly combined.
  • Pour the mixture into the prepared baking dish and spread out evenly.
  • Place in the pre-heated oven and bake for 25 – 30 minutes, or until the cheese is melted and bubbly.
  • Once done, remove from the oven and alow to cool for a few minutes.
  • Garnish with fresh parsley and serve.
