Peruvian Fried Rice (Arroz Chaufa)
Arroz chaufa or Arroz de Chaufa means Chinese rice. It’s a Peruvian dish that was introduced by Chinese Peruvians who immigrated to Peru between the 1960’s to late 1990’s.
Ingredients
- 2 tbsp. sesame oil
- 1 bunch green onions, chopped, divided into green and white parts
- 1 orange bell pepper, diced
- 2 hot dogs, sliced
- 2 eggs, beaten
- 2 garlic cloves, smashed and cut into small pieces
- 1 tbsp. ginger root, peeled (or not), grated
- 1 cup chicken, cooked and shredded
- 4 cups pre-cooked rice, cold
- 2 – 3 tbsp. soy sauce, or to taste
Instructions
- Pre-heat a large skillet or wok to medium heat.
- Pour sesame oil in the bottom.
- Add hot dogs, onion and bell pepper; sauté until onions are translucent and bell peppers have softened.
- Add garlic and ginger; continue to sauté for a minute or so; do not overcook.
- Slide all ingredients to the side; pour the beaten eggs onto the other side.
- Using a spatula, scramble the eggs.
- Once cooked, combine the eggs with the vegetable mix.
- Add the rice and chicken to the vegetable and egg mixture.
- Pour the soy sauce on top.
- Stir and fry the rice and vegetable mixture until heated through and combined.
- Season with additional salt, if needed.
