
Raspberry Pork Chops
Ingredients
- 4 boneless pork loin chops
 - 1 tbsp. canola oil
 - ¼ cup cider vinegar
 - ¼ cup seedless raspberry jam
 - 1 tbsp. prepared mustard
 - Salt and fresh ground black pepper, to taste
 
Instructions
- In a large skillet, over medium heat, brown loin pork chops in oil on both sides.
 - Stir in the vinegar, jam, mustard, salt and pepper.
 - Reduce heat; cover and simmer for 10 – 15 minutes or until juices run clear.
 - Remove loin pork chops and keep warm.
 - Continue to cook sauce, over high heat, until reduced by half; stirring frequently.
 - Spoon over loin pork chops.
