Roasted Garlic Caesar Salad Dressing

Ingredients
  

  • 1 cup mayonnaise
  • 1 small head of roasted garlic, mashed
  • 1/3 cup parmesan cheese, finely grated
  • 1 tbsp. Dijon mustard
  • Juice of half a lemon
  • 1 tbsp. Worcestershire Sauce
  • 1 tsp. red or white wine vinegar
  • 2 tbsp. fresh parsley, chopped
  • 1/2 tsp. anchovy paste, optional
  • Pinch salt and pepper, or to taste

Instructions
 

  • In a medium bowl, combine all of the salad dressing ingredients; mix well.
  • This can be done with a whisk, a blender or food processor.
  • Chill well before serving.

To roast a head of garlic:

  • Pre-heat oven to 350°F.
  • Cut a little off the top of the head, ¼” or so, to reveal the cloves inside.
  • Place the garlic head on a square of aluminum foil.
  • Sprinkle on a little salt and pepper, to taste.
  • Drizzle with a teaspoon of olive oil.
  • Bring all sides of the aluminum foil together and twist to seal the garlic head inside.
  • Roast for about 45 minutes
  • Remove from oven and squeeze the garlic cloves out of their skins.
  • Mash with a fork until a smooth paste is formed.
