
Roasted Garlic Caesar Salad Dressing
Ingredients
- 1 cup mayonnaise
 - 1 small head of roasted garlic, mashed
 - 1/3 cup parmesan cheese, finely grated
 - 1 tbsp. Dijon mustard
 - Juice of half a lemon
 - 1 tbsp. Worcestershire Sauce
 - 1 tsp. red or white wine vinegar
 - 2 tbsp. fresh parsley, chopped
 - 1/2 tsp. anchovy paste, optional
 - Pinch salt and pepper, or to taste
 
Instructions
- In a medium bowl, combine all of the salad dressing ingredients; mix well.
 - This can be done with a whisk, a blender or food processor.
 - Chill well before serving.
 
To roast a head of garlic:
- Pre-heat oven to 350°F.
 - Cut a little off the top of the head, ¼” or so, to reveal the cloves inside.
 - Place the garlic head on a square of aluminum foil.
 - Sprinkle on a little salt and pepper, to taste.
 - Drizzle with a teaspoon of olive oil.
 - Bring all sides of the aluminum foil together and twist to seal the garlic head inside.
 - Roast for about 45 minutes
 - Remove from oven and squeeze the garlic cloves out of their skins.
 - Mash with a fork until a smooth paste is formed.
