Smoked Salmon Crostini

Ingredients
  

  • 1 small baguette, sliced into 24 pieces
  • Olive oil
  • 1 8-ounce package reduced-fat cream cheese, softened
  • ¼ cup fresh chives, snipped
  • 2 tbsp. capers, drained, well-rinsed, chopped
  • 1 4-ounce package smoked salmon, cold, cut into pieces
  • Red onion, chopped in very thin strips
  • Dill sprigs for garnish

Instructions
 

  • Pre-heat the broiler, on high.
  • Place baguette slices on a baking sheet.
  • Brush each slice with olive oil; be sure to cover both sides of the slices.
  • Place in pre-heated broiler and bake about 4 minutes; watch carefully – until lightly browned.
  • Remove from the oven and arrange on a serving platter.
  • In a small bowl, mix together the cream cheese, chives and capers.
  • Spread about 2 teaspoons of cream cheese, or more if desired, on each baked bread slice.
  • Top each with a salmon piece, red onion and dill.
