
Southwest Roasted Potatoes
Ingredients
- 2 large baking potatoes, unpeeled
- 2 tbsp. vegetable oil
- 1 red bell pepper
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell ppper
- ½ red onion
- 1/2 tsp. chili powder
- ½ tsp. paprika
- 1 tsp. oregano
- 1 tsp. garlic powder
- 1 tsp. salt, or to taste
Instructions
- Pre-heat the oven to 425°F and line a large rimmed baking sheet with aluminum foil.
- Wash and cut potatoes into cubes that are about ½-inch in size.
- Using a large pot, over medium heat, place 2 tablespoons of oil (more if needed) into the pot with the cut up potatoes; stiring often; cook for about 15 to 20 minutes to par-cook the potatoes (this ensures the complete recipe is done within the time set below).
- Cut bell peppers and onion into pieces that are about the same size as potatoes; add to pot.
- Add all the spices into the pot with the potatoes and vegetables; mix well until evenly incorporated.
- Spread potato and vegetable mixture evenly onto the prepared baking sheet.
- Place in the pre-heated oven and bake for 35 to 40 minutes or until potatoes, bell peppers and onions are completely cooked.
Notes
This recipe serves 4 but can easily be adapted to accomodate many servings (just change the ingredients to align with the number of potatoes used).
