Southwest Roasted Potatoes

Ingredients
  

  • 2 large baking potatoes, unpeeled
  • 2 tbsp. vegetable oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell ppper
  • ½ red onion
  • 1/2 tsp. chili powder
  • ½ tsp. paprika
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 1 tsp. salt, or to taste

Instructions
 

  • Pre-heat the oven to 425°F and line a large rimmed baking sheet with aluminum foil.
  • Wash and cut potatoes into cubes that are about ½-inch in size.
  • Using a large pot, over medium heat, place 2 tablespoons of oil (more if needed) into the pot with the cut up potatoes; stiring often; cook for about 15 to 20 minutes to par-cook the potatoes (this ensures the complete recipe is done within the time set below).
  • Cut bell peppers and onion into pieces that are about the same size as potatoes; add to pot.
  • Add all the spices into the pot with the potatoes and vegetables; mix well until evenly incorporated.
  • Spread potato and vegetable mixture evenly onto the prepared baking sheet.
  • Place in the pre-heated oven and bake for 35 to 40 minutes or until potatoes, bell peppers and onions are completely cooked.

Notes

This recipe serves 4 but can easily be adapted to accomodate many servings (just change the ingredients to align with the number of potatoes used).
