Pre-heat the oven to 375°F.
Grease a baking sheet or line it with parchment paper.
In a shallow bowl, combine panko, ¾ cup Parmesan, garlic powder, onion powder, parsley, salt and pepper.
Place the beaten eggs in a shallow bowl.
Dip each chicken breast in the beaten eggs; then coat in the Parmesan mixture; press gently to ensure an even coating.
Heat the olive oil in a large skillet over medium heat.
Sear the chicken breasts for 2 – 3 minutes per side, or until golden brown.
Transfer chicken to the prepared baking sheet.
Sprinkle remaining Parmesan and mozzarella cheese on top of each piece.
Place in the pre-heated oven and bake for 15 to 18 minutes, or until the chicken reaches an internal temperature of 165°F.
For an extra layer of flavor, add a spoonful of marinara sauce on top before serving, optional.
