Steakhouse Parmesan Chicken

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese, divided
  • 1 cup Panko breadcrumbs
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. dried parsley
  • Salt and pepper, to taste
  • 2 large eggs, beaten
  • 2 tbsp. olive oil
  • 1 cup mozzarella cheese, shredded
  • ½ cup marinara sauce, optional

Instructions
 

  • Pre-heat the oven to 375°F.
  • Grease a baking sheet or line it with parchment paper.
  • In a shallow bowl, combine panko, ¾ cup Parmesan, garlic powder, onion powder, parsley, salt and pepper.
  • Place the beaten eggs in a shallow bowl.
  • Dip each chicken breast in the beaten eggs; then coat in the Parmesan mixture; press gently to ensure an even coating.
  • Heat the olive oil in a large skillet over medium heat.
  • Sear the chicken breasts for 2 – 3 minutes per side, or until golden brown.
  • Transfer chicken to the prepared baking sheet.
  • Sprinkle remaining Parmesan and mozzarella cheese on top of each piece.
  • Place in the pre-heated oven and bake for 15 to 18 minutes, or until the chicken reaches an internal temperature of 165°F.
  • For an extra layer of flavor, add a spoonful of marinara sauce on top before serving, optional.
