White Queso Dip
Ingredients
- ½ tbsp. olive oil
- ¼ cup sweet onion, chopped
- ½ to1 jalapeno, or more to taste, minced
- 1-pound white American cheese, shredded
- 1 cup whole milk
- ¼ to ½ cup low sodium chicken broth
- ¼ cup cilantro, chopped
- ½ cup tomatoes, finely diced
Instructions
- To a small skillet, over medium low heat, add olive oil.
- Sauté onion and minced jalapeno in the heated oil.
- Turn heat to low; add shredded cheese and milk; stir continuously until cheese is melted.
- Slowly stir in enough chicken broth to thin out to desired consistency.
- Stir in fresh chopped cilantro and finely diced sun ripened tomatoes.
Notes
Purchase good quality American cheese from your grocer’s deli; it does make a difference; do not use the prepackaged individually wrapped cheese.
Thin out the cheese sauce using low sodium chicken broth; use small amounts at a time till you get it to the right consistency; if too thick the Queso will form a skin.
Try adding fresh jalapenos and/or sun ripened tomatoes.
