Zucchini Pie

Zucchini Pie

Serve the zucchini pie as a main dish with fresh salads as an accompaniment.

Ingredients
  

  • 3 large eggs
  • 1 cup Parmesan cheese, grated
  • ½ cup canola oil
  • 1 tbsp. fresh parsley, minced
  • 1 garlic clove, minced
  • ¼ tsp. salt
  • ⅛ tsp. pepper
  • 3 cups zucchini, sliced
  • 1 cup biscuit/baking mix
  • 1 small onion, chopped

Instructions
 

  • Pre-heat the oven to 350°F.
  • Grease a 9-inch deep pie dish; set aside.
  • In a large bowl, whisk the first 7 ingredients.
  • Stir in the zucchini, baking mix and onion; mix to combine.
  • Pour all into the prepared pie dish.
  • Place in the pre-heated oven and bake at 350° for 25 to 35 minutes or until lightly browned.
