Garlic Orzo Tuscan Shrimp

Ingredients
  

  • ½ cup orzo pasta, uncooked
  • 1 tbsp. butter
  • 3 tsp. jarred minced garlic
  • ½-pound shrimp, peeled, deveined, tails off
  • ½ small yellow onion
  • 3 baby Bella mushrooms
  • ¼ cup jarred roasted red peppers, drained
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • 1-½ cups baby spinach leaves
  • ⅓ cup Parmesan cheese, shredded
  • 1 tsp. dried Italian herbs
  • ½ tbsp. fresh parsley, chopped

Instructions
 

  • Dice the onion and slice the mushrooms.
  • Bring a pot of water to a boil; cook the orzo pasta per the package instructions; about 8 or 9 minutes; drain the orzo; set aside.
  • While the orzo is cooking, heat a large skillet, over medium heat, and melt the butter.
  • Add in the minced garlic and shrimp; fry two minutes on each side, until cooked through and pink.
  • Transfer the shrimp to a bowl; set aside.
  • Add the onions and mushrooms to the butter remaining in the skillet.
  • Stir in the roasted red peppers and fry for 1 to 2 minutes.
  • Reduce heat to medium low heat; add the heavy cream bringing it to a gentle simmer, stirring occasionally.
  • Add salt and pepper, to taste.
  • Stir in the spinach leaves and shredded Parmesan cheese.
  • Allow the sauce to simmer for about a minute until cheese melts.
  • Sprinkle the herbs and parsley over the mix; stir to combine.
  • Stir the shrimp and cooked orzo into the mixture.

Notes

Consider buying shrimp that is packaged and already peeled, deveined and has tails removed.

I made this dish today. Because I was having some friends over.they loved it so much I had no leftover. It was absolutely delicious. I can see myself making this again. Thank you for sharing this recipe.
