Cheesy Homemade Meatball Subs

Ingredients
  

  • 1 tbsp. olive oil
  • ½ onion, thinly sliced
  • ½ green bell pepper, thinly sliced
  • 1 26-ounce jar tomato-basil pasta sauce
  • 12 frozen Complete Comfort Foods Make-Ahead Meatballs (recipe below)
  • ½ cup water
  • 1 16-ounce loaf French bread, cut into fourths
  • 1 8-ounce package shredded mozzarella cheese

Instructions
 

  • In a large skillet, heat oil over medium heat.
  • Add onion and bell pepper; cook, stirring frequently for 6 minutes.
  • Add pasta sauce, Make-Ahead Meatballs, and ½ cup water.
  • Bring to a boil, reduce heat, and simmer for 20 minutes.
  • Pre-heat broiler and line a rimmed baking sheet with aluminum foil.
  • Split bread pieces lengthwise, being careful not to cut all the way through.
  • Spoon 3 meatballs and sauce into each bread piece; top with cheese.
  • Place on prepared pan.
  • Broil 4 to 5 minutes or until cheese is melted; serve immediately.

Notes

If a broiler is not available, make this recipe using a 450°F oven. The meatballs will take about 15 minutes to cook through and the bread-toasting and cheese-melting will take 2 to 4 minutes each.
