Newfoundland Mice Cookies
Ingredients
- ¼ cup butter, melted
- 1 cup smooth peanut butter
- 1 tsp. vanilla extract
- 2 cups confectioners' sugar
- 1 cup crispy rice cereal
- 1-½ cups chocolate chips, melted in a double boiler
Instructions
- In a mediaum bowl, beat together the butter, peanut butter, vanilla and confectioners' sugar until smooth.
- Carefully fold in the rice cereal,
- Roll into balls or small cigar shapes and freeze for a couple of hours before dipping in the melted chocolate.
- Remove from the freezer and dip cookies in the melted chocolate.
- Place dipped cookies on a parchment paper lined cookie sheet and chill until the chocolate sets.
Notes
Makes about 2 dozen cookies which freeze really well.
Going to make a double recipe today. I have a bunch of newfies coming for Thanksgiving weekend
How do you keep the chocolate from melting so quick? I put them in the freezer but literally melt on my fingers just transferring them. Taste is delicious though!
