Newfoundland Mice Cookies

Ingredients
¼ cup butter, melted
1 cup smooth peanut butter
1 tsp. vanilla extract
2 cups confectioners' sugar
1 cup crispy rice cereal
1-½ cups chocolate chips, melted in a double boiler
Instructions
In a mediaum bowl, beat together the butter, peanut butter, vanilla and confectioners' sugar until smooth.
Carefully fold in the rice cereal,
Roll into balls or small cigar shapes and freeze for a couple of hours before dipping in the melted chocolate.
Remove from the freezer and dip cookies in the melted chocolate.
Place dipped cookies on a parchment paper lined cookie sheet and chill until the chocolate sets.
Notes
Makes about 2 dozen cookies which freeze really well.
