Spicy Shrimp Tacos

Ingredients
  

  • 4 tbsp. extra-virgin olive oil, divided
  • 1-pound large shrimp, peeled and deveined
  • 1 tbsp. shrimp seasoning
  • ⅛ tsp. salt
  • 1-½ cups red cabbage, thinly sliced
  • 2 tbsp. fresh cilantro, chopped
  • 2 tbsp. lime juice
  • 8 6-inch corn tortillas, warmed
  • 1 avocado, sliced
  • ½ cup pico de gallo

Instructions
 

  • In a large skillet, over high heat, heat 2 tablespoons oil.
  • Sprinkle shrimp evenly with shrimp seasoning and salt.
  • Add the shrimp to the pan; cook, stirring often, until opaque; 3 to 4 minutes.
  • Remove from the heat; transfer to a plate.
  • In a medium bowl, toss cabbage, cilantro, lime juice and the remaining 2 tablespoons oil until combined.
  • Divide the shrimp among warm tortillas.
  • Top with cabbage mixture, avocado and pico de gallo.
