Irish Coffee Cake
Ingredients
For the Chocolate Stout Cake:
- 2 cups sugar
- 2 cups all-purpose flour
- ¾ cup cocoa
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 2 eggs
- 2 cups Guinness stout
- ½ cup vegetable oil
- 1 tsp. vanilla extract
- 2 ounces Irish Whiskey, optional
For the Irish Cream Frosting:
- 3/4 cup butter
- 4 cups confectioners' sugar
- 1/3 cup Irish Cream Liqueur
Instructions
To prepare the cake batter:
- Pre-heat oven to 350°F.
- In a mixing bowl, combine all ingredients and beat with electric mixer for 2 minutes.
- Pour into 2 greased 9-inch cake pans.
- Consider using additional cocoa to dust the sides and bottom of the pans instead of flour and line the bottom of the cake pans with parchment paper.
- Bake for 30 – 35 minutes or until toothpick inserted in the center comes out clean.
- Cool in pans for 5 minutes before turning out onto a wire rack to cool completely.
- When cooled, sprinkle each layer with one ounce of Irish whiskey, if you choose to use it.
To prepare the Irish cream frosting:
- With an electric mixer, beat together the butter, icing sugar and Irish cream until very smooth.
- This frosting should be easily spreadable.
- If you think it’s too thick, you may add a few drops of Irish Cream at a time to bring it to the right consistency.
- If it is too soft, add a little more icing sugar.
- Frost the middle and top of the cake with the frosting.
