Prepare a wire rack; sit on a baking sheet covered with papers towl underneath; set aside.
Using a medium bowl, add softened cream cheese, shredded cheddar, cooked bacon, diced jalapeños, salt, pepper, onion powder and garlic powder; stir until completely combined.
Lay the egg roll wrappers out flat and place a scoop of the filling in the center.
Wet the outer edges with water.
With one of the corners facing you, fold the corners on the sides inward and then roll the corner that is closer to you inward and be sure to seal the egg roll completely.
Repeat until all of the egg roll wrappers have been filled.
Heat approximately 1-inch of oil to 350°F.
Fry egg rolls on each side until golden brown; about 1 – 2 minutes on each side.
Remove from the oil; place on the prepared wire rack and allow to cool.
Serve with a dipping sauce of your choice, optional.
