
Blueberry Cottage Cheese Breakfast Bake

Ingredients
- 2 cups cottage cheese
- 2 cups fresh blueberries
- 3 large eggs
- ½ cup almond flour or gluten-free flour
- ¼ cup honey or maple syrup
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- ½ tsp. cinnamon
Instructions
- Pre-heat the oven to 350°F and grease a 9-inch by 13-inch baking dish.
- In a large bowl, combine the cottage cheese, eggs, honey and vanilla extract; mix well until smooth.
- In another bowl, whisk together the almond flour, baking powder, cinnamon and salt.
- Gradually add the dry ingredients to the wet mixture; stir until just combined.
- Gently fold in the blueberries, being careful so they do not break.
- Pour the batter into the greased baking dish and spread evenly.
- Place in the pre-heated and bake for 30 to 35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Remove from the oven and allow to cool slightly before slicing and serving.
- Enjoy warm or at room temperature.
