Pre-heat oven to 350°F.
Prepare a 10-inch cake pan by greasing and dusting with all-purpose flour.
In a large bowl, sift dry ingredients together.
In another bowl, mix the brown sugar, corn oil, water, maple syrup, applesauce, cider vinegar and vanilla; thoroughly combine.
Add the dry ingredients to the wet ingredients and mix for 2 minutes.
Place in cake pan and bake for 30 to 40 minutes; when a toothpick, inserted in the middle of the cake, comes out dry, the cake is done.
Cool completely, remove from pan, place on cake dish and frost with Pillsbury's Coconut Pecan Frosting which is non-dairy.
