Broccoli, Apple and Blueberry Salad

Ingredients
  

For the Salad:

  • 1 apple, cut into pieces
  • 1 tbsp. lemon juice
  • 1 ½-pounds fresh broccoli, cut into florets
  • 1 cup fresh blueberries
  • ¼ cup chopped red onion, finely chopped
  • ½ cup dried cranberries
  • ¼ cup sunflower seeds

For the Yogurt Dressing:

  • 1 cup Greek yogurt
  • ¼ cup honey
  • 1 tbsp. lemon juice
  • 2 tsp. apple cider vinegar
  • 1 tbsp. poppy seeds

Instructions
 

  • In a large bowl, place the broccoli, blueberries, red onion, cranberries and sunflower seeds.
  • In a small bowl, mix the apple with 1 tablespoon lemon juice; add this to the large bowl with the rest of the salad.
  • In another small bowl, whisk together all the ingredients for the yogurt dressing.
  • Pour the dressing over the salad and mix; you decide the amount of dressing. 
  • The salad can be served immediately or refrigerated for up to 3 days in the refrigerator.
