Broccoli, Apple and Blueberry Salad
Ingredients
For the Salad:
- 1 apple, cut into pieces
- 1 tbsp. lemon juice
- 1 ½-pounds fresh broccoli, cut into florets
- 1 cup fresh blueberries
- ¼ cup chopped red onion, finely chopped
- ½ cup dried cranberries
- ¼ cup sunflower seeds
For the Yogurt Dressing:
- 1 cup Greek yogurt
- ¼ cup honey
- 1 tbsp. lemon juice
- 2 tsp. apple cider vinegar
- 1 tbsp. poppy seeds
Instructions
- In a large bowl, place the broccoli, blueberries, red onion, cranberries and sunflower seeds.
- In a small bowl, mix the apple with 1 tablespoon lemon juice; add this to the large bowl with the rest of the salad.
- In another small bowl, whisk together all the ingredients for the yogurt dressing.
- Pour the dressing over the salad and mix; you decide the amount of dressing.
- The salad can be served immediately or refrigerated for up to 3 days in the refrigerator.
