Scalloped Corn
Ingredients
- 1 15.25-ounce can whole kernel corn, drained
- 1 14.75-ounce can cream style corn
- 2 green onions, chopped
- 2 eggs, beaten
- 20 bacon flavored Ritz Crackers, crushed
- 2 tbsp. butter, melted
- 1 cup sharp cheddar cheese, shredded
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 cup canned French fried onions, crushed, for topping
Instructions
- In a bowl, combine both cans of corn, the onions and the beaten eggs.
- Pre-heat oven to 350°F.
- Stir in the crackers, butter, cheese, salt and pepper.
- Pour into a lightly greased 9 x 13-inch baking dish.
- Place in oven and bake for 40 minutes.
- Remove from oven and top with the crushed fried onions.
- Return to oven for 5 – 6 minutes or until onions are lightly browned.
