Ham, Egg and Cheese Breakfast Cups
Ingredients
- Cooking spray
- 16 slices deli ham
- 8 eggs
- Salt and pepper, to taste
- Shredded cheddar cheese
- Chives
Instructions
- Pre-heat oven to 350°F.
- Spray eight regular sized muffin cups with cooking spray.
- Using two slices of ham for each cup, lay the ham slices crisscrossing each other, ruffing the slices into the muffin cup and up the sides to make it fit.
- Crack one egg into each muffin cup.
- Sprinkle with salt and pepper
- Top with cheese.
- Bake for 10 – 12 minutes or until white appears cooked.
- Sprinkle each serving with chives prior to serving.
