Pre-heat oven to 375°F.
Using an electric mixer, on high speed, beat cream cheese until light and fluffy.
Gradually, add 1 cup sugar, beating well.
Add eggs, one at a time, beating well after each addition.
Stir in 1/3 cup amaretto.
Pour mixture into prepared pan.
Bake for 45 – 50 minutes or until mixture is set.
While cheesecake is baking, in a small bowl, combine sour cream, 2 tbsp. sugar, 2 tbsp. amaretto; stir well; set aside.
Remove cheesecake from oven.
Increase oven heat to 500°F
Spoon sour cream mixture over cheesecake and bake for 5 minutes.
Remove from oven, place on a wire rack and let cool to room temperature.
Use optional garnishes, if desired.
