Amaretto Cheesecake

Ingredients
  

For the Graham Cracker Crust:

  • 1 2/3 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter or margarine, melted

For the Amaretto Cheesecake:

  • 3 8-ounce packages cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 1/3 cup amaretto

For the Sour Cream Topping:

  • 1 1/2 cups sour cream
  • 2 tbsp. sugar
  • 2 tbsp. amaretto
  • Sliced almonds, grated chocolate, strawberry halves, garnish, optional

Instructions
 

To prepare the graham cracker crust:

  • In a medium bowl, combine all ingredients, mixing well.
  • Firmly press crumb mixture evenly over bottom and sides of a 9-inch spring form pan.

To prepare the amaretto cheesecake:

  • Pre-heat oven to 375°F.
  • Using an electric mixer, on high speed, beat cream cheese until light and fluffy.
  • Gradually, add 1 cup sugar, beating well.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in 1/3 cup amaretto.
  • Pour mixture into prepared pan.
  • Bake for 45 – 50 minutes or until mixture is set.
  • While cheesecake is baking, in a small bowl, combine sour cream, 2 tbsp. sugar, 2 tbsp. amaretto; stir well; set aside.
  • Remove cheesecake from oven.
  • Increase oven heat to 500°F
  • Spoon sour cream mixture over cheesecake and bake for 5 minutes.
  • Remove from oven, place on a wire rack and let cool to room temperature.
  • Use optional garnishes, if desired.
