Bailey’s Mint Chocolate Dream Parfaits
Ingredients
For the Crust:
- 1 cup chocolate cookie crumbs
- ¼ cup unsalted butter, melted
For the Minty Baileys Cream Layer:
- 1-½ cups heavy cream
- ½ cup Baileys Irish Cream
- 1 tsp. peppermint extract
- ½ cup confectioners' sugar
- Green food coloring (optional, for a festive touch)
For the Garnish:
- Chocolate shavings
- Fresh mint leaves
Instructions
To prepare the crust:
- In a bowl, mix chocolate cookie crumbs with melted butter until well combined.
- Press the mixture evenly into the bottom of serving glasses or bowls to form a crust.
- Chill the crust in the refrigerator while you prepare the cream layer.
To prepare the minty Baileys cream layer:
- In a large bowl, whip heavy cream until it starts to thicken.
- Add Baileys Irish Cream, peppermint extract and confectioners' sugar.
- Continue whipping until stiff peaks form.
- If desired, add a few drops of green food coloring and gently fold it into the cream mixture for a festive look.
To assemble the parfaits:
- Spoon or pipe a layer of the minty Baileys cream over the chilled chocolate cookie crust.
- Add additional layers of the cream mixture, if desired, and smooth each layer evenly.
For the Garnish:
- Top with chocolate shavings and fresh mint leaves for a beautiful presentation.
To store and serve:
- Chill the parfaits in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
