Baked Barbecue Pork Riblets

Ingredients
  

  • 3-pounds pork riblets
  • 2 cups brown sugar, lightly packed
  • 2 tbsp. paprika
  • 2 tsp. dry mustard
  • 1 tbsp. chili powder
  • ¼ cup Worcestershire sauce
  • ½ cup white vinegar
  • 1-½ cups ketchup
  • 1 cup water
  • ¼ tsp. salt
  • ½ tsp. ground black pepper

Instructions
 

  • Pre-heat oven to 450°F.
  • Line a large baking sheet with parchment paper; set aside.
  • Rinse the pork riblets under cold water to remove any small pieces of bone that may be present; pat the riblets dry with paper towel and line them up on the prepared baking sheet; do not overlap the riblets.
  • Place in the pre-heated oven and bake the riblets for 45 minutes.
  • Turn the riblets over after the first 25 minutes of baking time.
  • While riblets are baking, using a medium bowl, whisk together the remaining ingredients until well incorporated; set aside.
  • Once the riblets have browned, remove from the oven; do not turn off the oven. 
  • Pour the sauce mixture over the riblets and turn the riblets over so that each riblet is well coated in the sauce.
  • Reduce the heat to 350°F and return the riblets to the oven.
  • Bake for 90 minutes, turning the riblets once every 30 minutes.
  • Once fully baked, remove from oven and serve immediately.
