Baked Bow Tie with Sausage Casserole

Ingredients
  

  • 1-1/2 cups multigrain bow tie pasta, uncooked
  • 1-pound mild Italian sausage
  • 1 cup fresh mushrooms, sliced and divided
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 tsp. dried oregano
  • 1 tsp. Italian seasoning
  • 1/2 tsp. garlic, minced, more to taste
  • 1/4 tsp. onion powder
  • 1/8 tsp. pepper
  • 1 15-ounce can tomato sauce
  • 1/2 cup shredded mozzarella cheese, shredded and divided
  • 2 tbsp. Parmesan cheese, grated and divided

Instructions
 

  • Pre-heat oven to 350°F.
  • Cook pasta according to package directions for al dente; drain.
  • Meanwhile, in a large skillet coated with cooking spray, over medium-high heat, cook and crumble sausage with 1/2 cup mushrooms, onion and green pepper until no longer pink, 5 – 7 minutes.
  • Stir in seasonings and tomato sauce; bring to a boil.
  • Reduce heat; simmer, covered, 15 minutes.
  • Place pasta in an 8-inch square baking dish coated with cooking spray.
  • Top with meat sauce and remaining mushrooms.
  • Sprinkle with 1/4 cup mozzarella cheese and 1 tbsp. Parmesan cheese.
  • Bake, covered, 35 minutes.
  • Uncover; sprinkle with remaining cheeses.
  • Bake until heated through and cheese is melted, 5 – 10 minutes.
