Pre-heat the oven to 350°F.
Place the feta cheese in a small baking dish.
Scatter the olives and sun-dried tomatoes around the feta.
In a small bowl, combine the olive oil, sliced garlic, oregano, thyme, rosemary, and a pinch of salt and pepper; stir to thoroughly combine.
Pour the olive oil mixture over the feta, olives and sun-dried tomatoes.
Place in the pre-heated oven and bake for 20 minutes.
After the 20 minutes have elapsed, switch the oven to broiler and broil for 1 – 2 minutes to lightly brown the top; don't walk away during this step as the top can burn very quickly.
Garnish with chopped parsley and serve with sliced French bread or crostini.
