Bob’s Oven Browned Potatoes with Herbs
Ingredients
- 2-pounds white potatoes
- 2 tbsp. butter or margarine
- 2 tbsp. vegetable oil
- 1 tbsp. dried thyme, or to taste
- 1 tbsp. dried rosemary, or to taste
- 1 tbsp. dried oregano, or to taste
- Salt and pepper, to taste
Instructions
- Pre-heat oven to 375°F.
- Peel potatoes, cut into 1/4-inch slices, 1/4-inch strips and then cut each strip into 1/4-inch squares.
- Blot the pieces carefully on a paper towel to remove moisture.
- In a large skillet, melt butter; add the potato pieces and all seasonings.
- Allow to pre-cook for about 10 minutes and remove from stove.
- Put potato squares on a baking sheet, single layer and place in oven.
- Bake for 45 – 60 minutes, turning at the half way point, or until potatoes are well browned and tender.
Notes
I generally forego the peeling and cutting, of the potatoes, and purchase two packages of the pre-cut potatoes found in the refrigerated section of local grocery stores.
